Lemon Parsely Pesto

This recipe is a perfect alternative to the conventional Basil pesto.

Parsley is a wonderful herb, which grows in abundance all year round. And if you currently don’t have a herb garden its cheaper to buy too!

LEMON PARSLEY PESTO

Ingredients:

2 cups of chopped parsley (Italian or curly, doesn’t matter)

¼ Cup of chopped mint leaves

½ Cup of chopped raw cashew or macadamia nuts

Avocado or virgin olive oil, enough to make the mixture sloppy

1 large crushed clove of garlic

Juice of half a lemon

Sea salt

Method:

Mix all ingredients together in a stainless steel bowl.

Check for consistency & flavour. Adjust to your liking.

Fill into recycled jars.

Voila!

Serve antipasto style or use for cooking.

Pesto’s can be created from all sorts of herbs.

ALTERNATIVE: exchange the parsley for Coriander
